She's done it again, folks!

I can't remember if I told you all or not, but Jessica's got a goal to make a new dish each week. The last one didn't turn out quite as planned, but we can forget about that one. Because tonight's dish was phenomenal!

Introducing the Creamy Skillet Chicken!



In case any of your mouths are watering, you can find the recipe below:

2 tablespoons vegetable oil
4 boneless, skinless chicken breasts (1 1/2 pounds total)
3 medium-size assorted sweet peppers, cored, seeded and cut into 3/4-inch-wide strips
1 bottle (8 ounces) creamy Italian dressing
1 box (12 ounces) spinach fettuccine, cooked following package directions

Directions:
1.
In a large skillet, heat oil over medium-high heat. Season chicken with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
2. Add chicken to skillet; cook 2 minutes on each side or until lightly browned. Remove chicken to plate.
3. To same skillet, add peppers; cook over medium-high heat for 5 minutes. Stir in dressing. Return chicken to skillet with any accumulated juices.
4. Cover skillet; reduce heat to medium. Cook for 7 to 10 minutes or until internal temperature of chicken registers 170 degrees. Serve over cooked fettuccine.

A Weekend of Temples

Three days, three temples.

Oquirrh Mountain Temple
Thursday. Jessica, Ashley and I went to the Open House for the Oquirrh Mountain Temple in West Jordan. It was beautiful and quite different from the temple we're used to. I guess newer temples aren't exactly white throughout like the one we're used to here in Provo. There's a lot of wood, beautiful furnishings and everything but the same Spirit is there. It was really special.

Friday. Since the temple is moments away we're doing out best to go often. About setting a goal to attend the temple frequently, Elder Scott, in his last Conference talk, said, "This pattern will guarantee that those who live in the shadow of a temple will be as blessed as are those who plan far ahead and make a long trip to the temple."

Draper Temple
Saturday. Jessica's friend and former MTC companion, Ellie was sealed in the Draper Temple. Unfortunately, the day before the wedding was beautiful, warm and sunny whereas the day of the wedding was dismal, cold and cloudy. The rain was on and off, but the sealing was beautiful.

Trip to Grandma and Grandpa's Cabin

Ashley and I have been living it up lately. We both have a little extra time on our hands so we got to visit Grandma and Grandpa's cabin site.

Buncha new posts!

Hey, we did a quick update of what's been going on lately (a.k.a. the past two months).

Let's do lunch

Jessica and I have been wanting to meet Christine's friend, Matt, for some time now. We've seen him around campus a bunch, he was even in one of my classes, but for some reason we never stopped him to say hi. So, we set the date, Ashley came and we had a great time getting to know Matt a little better.

The fajitas were delish. And Matt's a great guy.

Stewart Falls

Jessica's Enrichment Activity took us up to Stewart Falls behind Sundance and Aspen Grove. There were four other couples that went (husbands were invited for this one). The hike was beautiful and inspired us to enjoy the canyon scenery around Provo more often this summer.

Next stop: Timp. Seriously, we're going to hike it.

Go Bees. Go Dinner.

Tasha and Ben got all the Utah Johns' together (Tasha, Ben, Nicole, Annika, Aly, Jessica, Me) for a night of mediocre baseball and a pretty bomb fireworks show. The Salt Lake Bees played the Reno Aces. Reno dominated but the night was far from dull. A foul ball came flying our way and the guy behind us was scrambling like crazy to grab it. It rolled underneath my seat so I snagged it. Poor guy. Some guys in the stands started arguing about the Yankees and Red Sox. Weird. I shouted "Brewers" but nobody seemed to care. And then the fireworks. Awesome.

A couple weeks after that, Nicole had everybody over dinner. Jessica and I were in charge of a side dish. Our fruit salad was beautiful. See for yourself. The dinner was delish, Annika and Aly were a lot of fun as usual.

Memorial Day BBQ

We love the Lewis Get-Togethers!

This Memorial Day, Darin and Aimee had everybody up to their place for a BBQ. The plan was to go into the canyon once it got too hot, but the weather was beautiful so we just stayed at their place and had a blast. The kids wore me out on the trampoline and I finally learned how to play Bocce Ball. The food was delicious, company was great, it was a blast!
